Today was a rainy day in Antwerp, typical Belgian weather to eat a Belgian creation. What better way to end the day with something sweet yet invitingly cozy.  A good friend of mine had offered a great deal of help to me and I wanted to offer something that I had put thought to but would not take so much time.

The foodie in me ended up and withe the ingredients I had in the pantry waffles it was.

  1. 2 cups all purpose flour
  2. 4teaspoons baking powder
  3. 12teaspoon salt
  4. 14cup sugar
  5. 2eggs, separated
  6. 12cup oil; I used vegetable oil
  7. 2 cups milk


Since I did not have the spray for the waffle machine, I brushed a little olive oil on the trays before baking to avoid any burns or being stuck in the tray.

Sift the dry ingredients together in a large bowl.


Separate the eggs.

In small bowl, beat egg whites until stiff.

Mix together the egg yolks, milk and oil and stir slightly.

Add to dry ingredients and mix well.

Fold in beaten egg whites.

Cook time was between 3 to 5 minutes until they turn golden brown

One hour later, the softest waffles were being enjoyed with syrup and honey.

PS: Do not be afraid if some waffles come out on “wrong opposite side of the tray”. They can still be removed.
